Bulletin of Food and Nutrition Research
Journal of Food and Nutrition Research (JFNR) is an international peer-reviewed scientific journal published by the National Agricultural and Food Centre, Department of Food Science, Bratislava, Slovakia.
The journal publishes original research articles, reviews and short communications in the fields of food science, food technology, food chemistry, microbiology, nutrition and food safety.
JFNR continues a publishing tradition dating back to 1959 and builds upon the legacy of the former Bulletin potravinárskeho výskumu, the first Slovak scientific journal dedicated to food research.
Since 2006, the journal has been published exclusively in English and serves as an international platform for researchers and professionals in food and nutrition sciences.
Today, JFNR publishes contributions from authors worldwide and is indexed in major international abstracting and citation databases.
Aim and scope
Journal of Food and Nutrition Research (JFNR) publishes peer-reviewed open access papers focusing on fundamental and applied research in chemistry, physics, microbiology, nutrition aspects, bioactivity, quality, safety, and technology of foods.
No article processing charges, published articles are freely available.
All published articles have undergone an single-anonymous peer review process.

This is an open access journal. The articles are published free of charge for both authors (no article processing charges) and readers. All content is freely available without charge to the user or his/her institution. Users are allowed to read, download, copy, distribute, print, search, or link to the full texts of the articles, or use them for any other lawful purpose, without asking prior permission from the publisher or the author.
COPYRIGHT AND LICENSING
The JFNR does not require authors to transfer the copyright of their published work to the journal. However, the authors grant first publication right to the publisher Národné poľnohospodárske a potravinárske centrum – National Agricultural and Food Centre (NAFC), Lužianky, Slovakia. Once the article is published, authors can reuse their papers in any form, without requiring permission from the publisher of the journal.
Since volume 65 (2026), all articles in the JFNR are published under a Creative Commons Attribution 4.0 International License (CC BY 4.0).
